Quick and Easy Mother's Day Cake
510 gram (18-oz.) box of yellow cake mix (batter prepared as directed on package)
120 grams (2 cups) crushed fresh strawberries
170 gram (6-oz.) package of strawberry flavoured gelatin
180 grams (3 cups) mini marshmallows

 

Instructions:

1. Preheat oven to 175 degrees C (350 degrees F).
2. Prepare cake mix as directed on package and set aside.
3. Spread the crushed strawberries on the bottom of a lightly greased, 58 x 83 sq. cm. (9 x 13 inch) baking dish. Sprinkle the strawberries with the gelatin, and top with mini marshmallows.
4. Pour the prepared cake batter on top of the marshmallows.

Bake in the preheated oven until a toothpick inserted in the center comes out clean, approximately 40 to 50 minutes. Cool in the pan for 20 minutes. Run a knife around the edges of the pan to loosen, and gently turn the cake out onto a serving platter. Any leftovers should be stored in the refrigerator.

Helpful Tips:

Use only fresh strawberries! Mash the strawberries slightly to help release their juices. The gelatin needs this juice so that it is not too tart. If you feel your strawberries aren't ripe and juicy enough after mashing, you can add a little sugar to them and let them sit for 1 hour.

Raspberry flavoured gelatin may be substituted for strawberry.

A whipped topping may be used if desired. It is also lovely served warm from the oven with a bowl of ice cream. For extra elegance, enjoy a thin drizzle of chocolate ganache on top.
