Christmas cake II
S. Miguel Island, Azores


500 grs. sugar
500 grs. flour
500 grs. butter
500 grs. fruit
250 grs. mollasses
lemon skin and juice
Cognac, brandy or liqueur
6 eggs
nutmeg
cinnammon
1 tbsp. Baking powder


 


Cut the fruits in pieces and let them soak overnight in cognac, brandy or liqueur
Beat softened butter until creamy and add the sugar, the egg yolks, mollasses, spices and the fruit alchoolic liquid. Squeeze the fruits well and mix with the flours adding to the mixture beatinng well, at last the stiffed egg whites. Take to the oven in a greased and floured pan
