Apple Tart Liboni
1 kg of apples
150 gr of caster sugar
150 gr flour
1 egg
1 tablespoon of baking powder
1/2 tablespoon vanilla
1/2 glass of milk
3 tablespoons of cognac
butter
salt
50 gr of icing sugar (optional)

 

Chop the apples into small pieces (3 cm squares by 1 cm thick).
Mix the beaten egg with the caster sugar, a pinch of salt, the flour, half a tablespoon of vanilla extract and the cognac. Add the milk till the batter becomes smooth and even (add more milk or less milk according to the consistency of the batter).

Mix the batter with the apples. The texture of the mix should be not too thick but sticky at this stage.

Butter a baking tray (with borders) and dust with flour. Preheat an oven at 220 degrees celsius (425 F.).

Put the mix on the tray and cook for 40 mins to 1 hour.

Optional: sprinkle the icing sugar on the cake and serve either hot or warm.
