Anna's Lo-Cal Fruit Cake
Fast and Yummy!
500 grams mixed dried fruit of any variety
2 cups unsweetened orange juice
2 cups self-raising flour
1 heaped tsp. of mixed spice

 

Soak fruit in juice overnight.

Turn oven on to 180 Celsius.

Add flour and spice to juice/fruit. Mix well.

Place mixture in greased 20 cm. tin, with baking paper on base. Bake for 45 minutes.

This cake is very moist and can be sliced and frozen for the weight conscious.
