Whole Wheat Banana and Pecan Pancakes
A Great Dish for a Special Brunch!
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1 Tbls. white sugar
1 tsp. brown sugar
1 1/2 tsp. baking powder
1/8 tsp. salt
1 tsp. ground cinnamon
1 tsp. vanilla extract
1/2 cup water
1/2 cup skim milk
1/4 cup chopped pecans
2 ripe bananas
1 egg


Combine flours, sugars, baking powder, salt, cinnamon.

Mash the bananas and mix with milk, vanilla, water, and beaten egg.

Combine the dry and wet mixtures and stir in pecans.

Heat lightly oiled griddle on medium high heat.

Pour batter onto griddle and cook until golden brown on both sides.
