Cod & Mushroom omlette
Omlette with cod & Mushrooms
6oz cod fillet, chopped
2 large portabella mushroom caps
1/2 small red onion
6 eggs
2 cloves crushed garlic
salt, pepper, dried oregano
Olive oil


chop the onion finely and saute in a little olive oil with the crushed garlic until soft. Add chopped cod fillet and cook until it starts to turn white. Add chopped mushrooms, oregano, salt & pepper and beaten eggs and fold when cooked on underside. This sounds really bizarre, but serve drizzled with Ken's thousand islnad dressing, delicious!
