Dads Lefse
Dad's Version of Lefse
3 cups mashed potatoes (reverse milk and water when making instant potatoes-make for 6 servings)
1/2 cup shortening
1 Tbls. sugar
1 tsp. salt
1/4 tsp. baking powder
1 1/2 cup flour
additional flour for kneading


Make 6 servings of instant mashed potatoes, reversing the measures for milk and water, cool thoroughly. (I usually make potatoes at noon and cool in refrigerator until evening).

Put potatoes in large mixing bowl, cut in shortening and mix. Add other ingredients and knead until no longer sticky.

Roll out and cook on lefse grill, turning to cook both sides evenly. (Note: if you don't have a lefse grill you can roll smaller pieces and cook in electric frying pan on high).
