Pancake for Lunch or Dinner!
1 lb. ground beef
1 small yellow onion, chopped
1 small red pepper, chopped
2 small potatoes, chopped
salt, to taste
pepper, to taste
Garlic Powder, to taste
1/2 cup cooking oil

6 eggs, scrambled


Fry potatoes, put aside.

Brown ground beef, drain. Add onion, red pepper, and fried potatoes, salt, pepper and garlic powder until cooked.

Mix ingredients in the bowl of scrambled eggs and stir until they are all mixed together.

Heat about 1/2 cup of cooking oil in the frying pan and put about one ladle of the mix ingredients in the frying pan and shape it like a pancake. Let cook then flip it over and cook the other side. When its light brown, it should be done. Do this 5 more times to make 6 pancakes.

Serve with hot steamed rice and catsup or with sweet chili sauce or honey mustard for dipping.
