Swedish Meatballs
Made in the Microwave
1 lb. ground beef
1 egg
1/2 cup dry bread crumbs
1/2 cup milk, divided
1 small onion, finely chopped
2 tsp. parsley flakes
1/2 tsp. salt
1/8 tsp. allspice
1/8 tsp. pepper
1 can condensed golden mushroom
soup

 

Combine ground beef, egg, bread crumbs 1/4 cup milk, onion, parsley, salt, allspice and pepper. Shape into 1 1/4 inch meatballs (about 20). Arrange in 8 inch square dish. Cover with wax paper. Cook on HIGH 6-8 minutes. In small bowl, blend soup and remaining milk; combine with meatballs. Cook, covered, at MEDIUM-HIGH 3 to 5 minutes, or until heated through. Serve if desired, over buttered noodles or rice, sprinkled with additional parsley.
