Beef with Asparagus and Black Beans
Chinese Beef Dish
1/2 lb. Beef (thinly sliced)
1 lb. Asparagus (cut 2 inches long)
1 tsp. Cornstarch dissolved in 1/3 cup water
1 Tbls. Chinese fermented black beans, minced with:
4 Cloves Garlic (minced)
1 tsp. Rice wine
2 tsp. Soy sauce

Marinating Sauce-
1 tsp. Cornstarch
1 tsp. Soy sauce
1/2 tsp. Rice wine
1/2 tsp. Sugar
1/2 tsp. Salt
2 tsp. cooking oil
1 tsp. rice wine

 

1. In a bowl, combine the beef and the marinating sauce, mix thoroughly and set aside for 1/2 to 1 hour.

2. When ready, heat 1 Tbls. cooking oil over high heat, stir in asparagus. Add 1/4 cup water and 1/2 tsp. salt. Cover pan for 2 minutes. After 2 minutes, remove asparagus to a platter and set aside.

3. Over high heat, add 1 Tbls. of oil. Stir-fry the black beans and garlic mixture. Stir for a few seconds. Add the beef. Stir-fry quickly for 2 minutes. Do not overcook or the beef will become tough. Add 1 tsp. of rice wine and 2 tsp. of soy sauce. Stir in asparagus.

4. Add cornstarch mixture. Stir 10 seconds or until thickened. Serve hot.
