SAVORY BEET SPREAD
deep-red color and subtle spark of flavor
1 can (16 ounces) beets, drained
3 canned anchovy fillets
2 tablespoons plain, fat-free yogurt
1 tablespoon lemon juice
1 garlic clove
1/4 teaspoon freshly ground pepper
2 ounces feta cheese, crumbled
1/4 cup chopped green onion

 

Preparation Time: Approximately 10 minutes

Preparation:
Purée beets, anchovy fillets, yogurt, lemon juice, garlic and pepper in a food processor. Stir in feta cheese and green onion. Refrigerate until chilled.
