Onion Fritters
4 large onions
4 cloves garlic
3/4 cup besan (chick pea flour)
1/2 cup plain flour
1 egg
1 1/2 tsp. bicarbonate of soda
1 tsp. chili powder
vegetable oil for shallow frying


1. Peel and halve the onions and then slice very thinly. Finely chop garlic.
2. Mix the flours with the remaining ingredients and enough water to make a smooth creamy batter. Add the onion and garlic.
3. Heat oil, about 2 cm deep, in a wide flat pan. Add tablespoonfuls of the batter and press into patties. Fry on both side until golden brown and cooked through. Remove to a rack covered with absorbent paper to drain.
4. Serve hot with chili sauce or hot mango chutney.
