Chicken Liver Pate
Delicious on Crackers or Toast
500 grams (1 lb.) chicken livers, trimmed
125 gms (4 oz.) butter
2 rashers bacon, rind removed
1 small finely chopped onion
2 cloves garlic
1 Tbls. brandy
salt and pepper, to taste
250 grams (1/2 lb.) cream cheese
30 gms (1 oz.) melted butter
extra Bay leaves, to garnish


Chop bacon, crush garlic.
Melt butter and saute bacon, garlic and onion.
Add livers. Cook, stirring 10 to 15 minutes until livers are cooked through. Allow to cool for a few minutes.

Whizz or process livers with cream cheese, brandy and seasonings.

Pour mixture into one or two ramekin dishes. Pour melted butter on top. Place small bay leaf on butter.

Refrigerate until firm.
