Asian Love Letters
Crispy fried bundles of Asian love
3 cups thinly sliced Napa cabbage
1/2 cup shredded carrots
12 cup diced scallions, greens included
1/4 cup chopped cilantro
2 cloves garlic finely diced
2 tablespoons minced ginger
3 Tbl soy sauce
2 tablespoons hoisin sauce
1 Tbl sugar
2 tsp Garam Masala
1 beaten egg
1 cup cooked jasmine rice
1 pack Egg roll wrappers cut on the diagonal into triangles
Oil for frying
Sweet Asian chili sauce for dipping

 

Preheat oil to 350 degrees. Combine all vegetables, seasonings, and rice in a bowl and stir until well combined. Beat egg to be used as glue for the envelope assembly. Lay one triangle in board and put a heaping teaspoon of filling in the center. With finger spread a small amount of egg around the edges of the triangle. Place a second triangle on top and seal edges together by pressing firmly around edges.
Take the two long corners of the triangle and seal the ends together with the egg
wash. It should took like an open envelope
at this point. Deep fry until golden brown. Serve immediately.
