3lbs of chicken gizzards (hearts optional) 4 lg green bell peppers 3 cloves garlic salt pepper 3 tbsp. olive oil tsp of italian seasoning

Cut gizzards into 3 sections Cut peppers into large chunks (3/4inch cubes) Mince garlic Combine all ingredients into large bowl. Add salt, pepper and two tbsp olive oil. Heat large size saucepan with remaining olive oil and heat on medium/hot. Add all ingredients and cover for 3 hrs. Stir occasionally. Uncover and reduce for last hour or until gizzards are tender. Enjoy with nice crusty bread, yields lots of dipping juices.
