fish
TALAPIA WITH MUSHROOM & OLIVE
1-Tbspolive oil
1-small onion
1-clove garlic minced
1-14.5 can of dice tomatoe
1-cup sliced cremini or buttom mushroom
3/4 cup pimiento stuffed olives, coarsley chooped
1-Tbsp fresh or 1/2 tsp dried oregano
1/4 tsp salt
1/8 tsp black pepper
4--6 to 8 oz tilapia fillets
hot cooked rice

 

heat olive oil add onions & garlic
2 to 3 minutes until onions are tender add undrained tomatoes,mushroom,olives,oregano
salt & pepper. Bring sauce to boling
gently place fish in skillet;spoon sauce over fish.return to boiling
Reduce heat ; simmer covered for 8 to 10 minutes until fish flakes easily. With a wides patula lift fish from skillet to a serving platter. Spoon sauce over fish
serve with rice;or crusty bread
