pork adobo the ultimate adobo recipe |
1kl pork 1/4 cup soy sauce 1/2 cup cane vinegar 1 bay leaf 1 bulb garlic 1/2 tsp. peppercorns 1 cup water 2 tbsp. palm oil or vegetable oil or any cooking oil(i prefer palm oil or we use to call it refined coconut oil) salt to taste
In a pan, combine all the ingredients ,cover and boil in a low-medium fire. when boiling, stir and leave again for another minute(do not open the cover and stir if not yet boiling, or it will ruin your adobo. its my secret but not anymore)...when liquid is almost dry(about 1/2 cup)and thick or when the pork is tender, remove the liquid from the pan and fry all the pork in the cooking oil until the desired appearance...then put the sauce back to the pan. simmer for 2mins while stirring then remove from fire....
