AWESOME SPECIAL SWEET - MYSOREPAK SPECIAL SWEET WITH CHICKPEA FLOUR |

Chickpea flour (also called Gram flour) is available in grocery stores. But the home made flour is always preferable in the preparation of special sweets or savoury items. To this purpose, rinse the chickpeas thoroughly and drain. Sundry for a day or two till the moisture is totally eliminated. Grind into a fine powder and save in a clean, dry and air tight jar for future use. Chickpea flour contains large quantity of dietary fibers (about 40%), some carbohydrates, Vitamins - A,D,K,and E and considerable amount of proteins (20%). It also contain sugars, saturated fats, sodium and cholesterol in minor quantities.
Chickpea flour : 1 Cup Sugar : 1 Cup Water : 2 Cups Clarified Butter (Ghee) : 3 Cups

1. To a shallow bottomed pan add two or three spoons of clarified butter (ghee) and heat. Add the peanut powder and fry till the raw smell is gone.
2. To a deep bottomed pan add sugar and water and boil till a medium consistency is obtained. Add the fried chickpea flour and mix thoroughly and see that no lumps are formed.
3. Add some ghee carefully and go on stirring. As and when the ghee gets absorbed, add some more ghee (do not add the entire ghee at a time). Thus repeat the process until the entire ghee is blended with the dough completely. (Constant stirring through out is most important).
4. Take the dough into a ghee-greased plate and allow to cool.
5. The preparation gets solidifies. Cut into desired shapes.
Serve as dessert.
