Butterscotch Cookies
Crisp and Buttery Melt in Your Mouth Cookies!
2 cups brown sugar
2 cups butter (not margarine or shortening)
2 eggs
1 tsp. vanilla
1 tsp. baking powder
1 tsp. cream of tartar
1/2 tsp. salt
4 cups flour

 

Cream sugar, butter, and eggs until smooth. Add vanilla, baking powder, cream of tartar, salt, and 2 cups of the flour, continuing to mix well. Add remaining 2 cups flour slowly, at this point you'll probably need to mix by hand with a wooden spoon as dough becomes quite stiff. Using plastic wrap, roll dough into oblong rolls. You should end up with about 6 rolls of dough approximately 2 inches in diameter. Refrigerate rolls overnight. Preheat oven to 375 degrees F. Grease cookie sheets well and slice rolls into 1/4 inch thick cookies. Bake until golden brown, 7-9 minutes. Do not underbake. These cookies are crisp and very delicious!
