1 (10 ounce) package frozen chopped spinach, thawed and drained 4 oz. canned corned beef 1 (4.5 ounce) can mushrooms, drained (8 ounce) swiss cheese, cut-up salt and pepper to taste 1 (9 inch) unbaked deep dish pie crust 5 eggs, beaten 1-1/2 cups milk salt and pepper to taste

Preheat oven to 375 degrees F (190 degrees C). Spread spinach, mushrooms and cheese into pie crust. Season with salt and pepper. In a medium bowl, whisk together eggs and milk. Season with salt and pepper. Pour into the pastry shell. Bake in preheated oven for 40-55 minutes, until set in center. Allow to stand 10 minutes before serving. Options: Bake without crust in greased pie pan. Microwave directions: Use greased pie pan (no crust). Microwave on high, uncovered, 15 minutes or until set, rotating dish 3 or 4 times. Let stand 5 minutes before cutting into wedges and serving. Can be appetizer or main course.
