5oz marg 2 large eggs 8oz sugar 8oz flour (NOT self-raising) 1.5 teaspoon baking powder few drops almond escence (optional) ____________
12oz fruit (apple, pear, anything similar) handful flaked almonds (optional)

add all ingredients from first list to a large bowl. mix well.
peel, core and slice fruit.
pour half of mixture into 8n greased cake tin.
add layer of fruit, then add remaining mixture, in blobs, one spoonful at a time (do not pour over).
sprinkle with flaked almonds, cook for 90 minutes at 160C. best eaten still warm.
mad props to my mother for making me this cake each time i left home to share with my uni co-residents, then passing the recipe on. everyone should know how to make at least one cake, and this one is ideal - as simple as they get, and tastier than most.
